The weather has turned and a nice warm meal is just the ticket for a cool night. Shepherd’s pie is a classic all-in-one meal. It has protein and a nice filling starch, which is great for a cozy meal and a full belly! Starting around Halloween and on into the winter you can use sweet potatoes or even pumpkin for the mashed topping. It doesn’t take too long to make it from scratch, but if you’d rather, you can make it ahead and freeze it in portions. This makes it great for an easy midweek dinner.
See below for a recipe for shepherd’s pie with a twist. This version of shepherd’s pie is a great change from the normal version made with white potatoes, because it is tastier- and healthier, too! Serve it up with a salad and a nice glass of red wine and it’s a near perfect meal.
Curried Shepherd’s Pie with Sweet Potato Topping- From the kitchen of Linda C.
SERVES 4 Per Serving: KCALS 538 FAT 23g SAT FAT 9g CARBS 50g
PREP 15mins COOK 50 mins
1 Tbsp. Olive Oil
1 Red Onion, finely chopped
2 cloves garlic, finely chopped 450g/1lb minced lamb (or beef if preferred)
2 Tsp. Onion seeds, plus extra for topping
1 Cooking apple, peeled, cored and diced
2 Tsp. Garam Masala
1 Tsp. Turmeric 15floz/¾ pint Hot Vegetable or Beef stock
For the topping: 900g/2lb Sweet potatoes mashed
- Heat olive oil in a large frying pan and add onion and a pinch of salt. Cook for 5 mins till onion is soft. Add garlic, mince and 1 tsp onion seeds. Stir and fry till mince is no longer pink.
- Add apple and spices. Stir, raise heat and add a little stock. Stir, scraping pan for juices, then add the rest of the stock and bring to the boil. Reduce and simmer for 15 mins till stock is reduced, not dry. Taste and season.
- Preheat oven to gas mark 5/180ºC (160ºC in a fan assisted oven). Add potatoes to a pan of salted water and cook for 10-15 mins till soft, then drain and mash (add some butter if wanted). Spoon mince mixture into a freezer proof/ovenproof dish and cover with mashed potato. Garnish with remaining onion seeds and put in oven for 15-20 mins, until topping begins to crisp.
To Freeze it:
Complete the recipe but don’t put it in the oven. Leave to cool completely, then double wrap in Clingfilm and foil. Label with date and cooking instructions. Freeze for up to 6 months. To reheat and eat defrost in the fridge overnight, the cook as per recipe.
